For condiments and other ingredients that I won’t be using quickly, it helps to scald the jars to keep them fresh.  Put the jars, any utensils you will use to fill them including funnels and spatulas, in a clean sink.  Boil some water.  Pour it over the jars, caps, and utensils.  Pick up with tongs, and put on a clean towel to drain and dry.  They are now ready to fill.
