Keeping a jar of fresh minced garlic in olive oil always on hand makes adding even small amounts easy.  I use my mini processor and already peeled fresh garlic.

Put cloves in the processor about half way up the sides.  Add a half teaspoon salt and drizzle olive oil to the level of about half that.  Process until minced.  Put in a jar in the refrigerator with a film of olive oil on top.  This also freezes really well.
